Walk into any Trader Joe’s and the smell of that sweetened cinnamon, and the presence of 100’s of pumpkins makes the reality of us being in the thick of Fall inescapable. Plus, every coffee shop under the sun is boasting of their pumpkin spice lattes. As I’m not a coffee drinker, sorry you will not be getting an recipes on that, but I wanted to share with you a fall dinner favorite of mine that incorporates pumpkin/ squash in the spirit of fall.
Pumpkin & Black Bean Chili
1/2 organic onion chopped
1 organic red or yellow bell pepper chopped
3-4 cloves organic garlic
4 cups organic chicken bone broth
1 can pumpkin
2 cans organic black beans rinsed and drained
1 can diced Organic Unsalted tomatoes with juice
2 tsp. Fresh Organic parsley
2 tsp. chili powder
1 1/2 tsp. oregano
1 1/2 tsp. Cumin
1 tsp Red Chili Pepper Flakes (optional)
2-3 cups cooked chopped Organic Hormone Free chicken (From a Roast Chicken OR baked chicken breasts)
Put all ingredients in slow cooker.
Cook on low 5 hours or more.
